Festive and fun balloon biscuit recipe

Learn how to make these fantastically festive balloon biscuits as a stunning show-stopper for your special event.

You will need
  • 110g butter
  • 100g sugar
  • 1 egg
  • 250g flour
  • 16 – 20 hard boiled sweets
  • Cake toppings/sprinkles
  • 45g white chocolate
  • * 2 strawberry laces

How to make balloon biscuits

  • Mix the soft unsalted butter and sugar in a bowl.

  • Add one egg and stir into the mixture.

  • Sieve in the flour and mix together until you've made a firm dough ball.

  • Wrap the ball of dough in cling film and place in the fridge to chill for 30 minutes.

  • Sprinkle some flour on the work surface and roll out the dough so that it’s roughly 0.5cm thick.

  • Preheat the oven to 180 degrees centigrade.

  • Cut circles out of the dough using a large (roughly 8cm) cookie cutter.

  • Use a smaller cookie cutter to turn your circles into rings.

  • Take the dough from the centre of the ring and cut it into a square using a knife or kitchen scissors. Ask an adult for help.

  • Repeat until you’ve used all the dough so you’re left with roughly 14 rings and 14 squares.

  • Place the shapes on a baking tray lined with non-stick baking paper.

  • Put them in the oven for 10 minutes. Grab a grown-up to help, when using the oven.

  • Remove from the oven and place a hard boiled sweet in the centre of the rings. Be careful as the tray will still be hot.

  • Return the biscuits to the oven for 5 – 6 minutes, until the sweets melt and fill the rings.

  • Remove carefully from the oven and leave to cool down.

How to decorate your balloon biscuits

  • Melt the white chocolate using short bursts in the microwave and carefully scrape into a piping bag.

  • Once the biscuits are cool, take one circular biscuit and add sprinkles to the centre.

  • Now pipe white chocolate around the rim of the biscuit.

  • Take another biscuit and turn it over, before piping white chocolate around the rim as well.

  • Add two strawberry laces on the bottom edge of one of the biscuits. Now sandwich the two circular biscuits together, with the chocolate side in the middle.

  • Take two square biscuits, cover one side of each in white chocolate and press them together around the other end of the two strawberry laces. Your biscuits should now look like a hot air balloon.

  • Repeat with the other remaining biscuits.

  • Place all the biscuits in the fridge to set for at least ten minutes.

  • Spread some of the white chocolate on the base of both squares and press them together.

  • Finally, put them in the fridge for another ten minutes to set and voila, you’ll end up with your very own edible hot air balloon.
